The Shun Ken Onion Series knives share the same premium materials (VG10 super-steel and PakkaWood handles) and beautiful suminagashi blade pattern as the Shun Classic line. What???s different with this Hollow Ground Santoku are the curves... the handle is curved to neatly nestle into the natural contours of your hand. The belly of the blade is curved to reduce cutting fatigue and provide extreme cutting versatility. The wider bolster with contour curved thumb and forefinger rests reduces tension during cutting. This design provides relief when doing large amounts of prep work and also makes the knife a pleasure to use for both right and left-handed chefs.
